Málaga Food News - Michelin recognises restaurants with a green star


As of 2021, the Michelin Guide is now recognising some restaurants with a green star. The Michelin Estrella Verde or Green Star is an icon in the shape of a green leaf that echoes nature. The guide wants to promote its ethos and commitment to sustainability throughout the gastronomy industry.
 
The Michelin Guide rewards restaurants that are innovative, by demonstrating that they respect the environment, manage their resources and take care of waste disposal. It is not only a distinction for restaurants, but it is also helps diners to choose restaurants who are also in tune with this philosophy.

One restaurant in the town of Fuengirola, West of Malaga on the Costa del Sol has been awarded one of the new green stars. Sollo Restaurant, in Fuengirola, run by chef Diego Gallegos has been awarded a green star in recognition of their sustainability and sourcing of ingredients. Chef Diego prizes himself on producing around 90% of the ingredients at Sollo.

Sollo's head chef Diego Gallegos specialises in sturgeon, caviar and river fish, for this he earned the name "The Caviar Chef". The restaurant has a special menu which changes seasonally. Even before ordering you are invited to sample a tasting menu with the different caviar on offer, to experience the unique flavours or to decide which caviar you would like to select with your main meal.
