The gastronomy of Spain is full of recipes that have been a classic for centuries. One of them is the Manchego pisto, which consists of a fried vegetable whose base is always tomato and pepper. But as with many other recipes, you can make Manchego pisto in many different ways.
Ingredients
· 1 onion
· 3 garlic cloves
· 1 red pepper
· 1 green pepper
· 1 zucchini
· 400g crushed tomato
· 1 teaspoon sugar
· Salt
· Freshly ground black pepper
· 1 teaspoon ground cumin
· Olive oil
· Freshly ground black pepper

Preparation
1. First, put the oil in a nonstick frying pan. When hot, add the chopped garlic and onion and smother for a few minutes over medium heat. Then, stir in the peppers also cut into pieces.
2. Saute everything together for a few minutes and add diced zucchini.
3. Let everything cook for a few minutes and add the crushed tomato. Add some salt, sugar, ground cumin and freshly ground black pepper.
4. Finally, cook all ingredients over a gentle heat until the tomato is well fried.
5. Serve with a fried egg on top and some crusty bread.
